I take it you're wanting a stew. I always cook the meat first for food safety, just cause I'm paranoid, so try that, cube it, toss it in the crock with the beans and add pata, a pureed tomato sauce, chopped peppers, onions, and baby carrots. Depending on your tastes, season with in and thyme for a greek flair, or red and black pepper with salt for more simple flavors. A cajun spice, called file (feel-ay) is added after cooking and lends an unmistakable bayou flavor.
